The change happens in the diversity and occasional 'mutation' of a gene. Not always having to be a mutation though. Certain gene traits are built in as standard from many previous specie forms from millions of years ago.
The genes dicatate, and decide, what type of species evolves and survives. Not climate conditions. Climate conditions accommodate and form. Forms change to fit into a climate.
