However, you're confusing what these people assert with what atheism is by definition.
People generally make decisions based on evidence, there is no evidence to support religious doctrine so some people do not believe it.
There is no evidence to support the concept of a God, so some people choose to not believe in one.
Of course, we cannot know. Then again, we cannot know if we are living in a dream.

No, not really, you have no evidence to suggest it is, so therefore the best solution you can produce is that life is not a dream.
As an atheist i cannot rule out God, but i can choose not to believe in such a concept based on the complete lack of evidence.
Certainty is rarer than most people think, maybe even impossible. That doesn't stop everyone from making rational decisions based on the best possible information they can obtain.
