I used to think Buckethead was a lame character-looking dude. NO. I WAS WRONG. Watch some of his home YouTube videos. Incredible electric guitar player. Incredible.
Top guitarist lists and discussions are generally bullshit because they heavily favour famous artists or guitarists from famous bands while there are amazing guitarists in many obscure bands. For example my brother is an obsessive fan of 80's hard rock and hair metal, and the guitarists in some of the bands he listens to are ridiculous, though little known.
My favourite guitarist is David Gilmour but he is by no means the greatest. He just had/has a wicked style/sound and is responsible for some of the greatest guitar solos ever. I'm also a big Clapton fan. His playing on 'Layla and Other Assorted Love Songs' is truly epic. Jimmy Page and Ritchie Blackmore were great guitarists in great bands. Mark Knopfler is brilliant. I think blues is really where it's at as far as great guitar playing goes, but I'm only just starting to get into the genre so I have no clear favourites at this point.
And yeah, Hendrix was pretty fucken amazing.
